Recommendation:
The spelt coffee cure:
Day 1: Boil 1 tablespoon of spelt coffee beans in 1/4 liter of water for 5 minutes, then drain. Reserve the beans. This first spelt coffee brew will be more green than brown and should improve in flavor over the next few days. It can be consumed with milk or cream and sweetened with sugar.
Day 2: Add 1 tablespoon of fresh grains to the grains from the first day, continue cooking with a good 1/4 L of water for about 3 minutes, drain and set aside the grains again.
Day 3: Add a tablespoon of fresh spelt grains to the grains from the first and second days, increase the water content slightly, boil for about 3 minutes, and strain. Reserve the grains. The decoction now tastes like good malt coffee.
Days 4, 5, and 6: Add another tablespoon of fresh grains to the remaining ones, increasing the water content slightly each time. Repeat the six-day course if necessary. You won't get used to it.
Spelt bread can also be crumbled into the coffee ("mocken"). The bread pieces should absorb the liquid thoroughly.
