  • Original text Hildegard: For the healthy person, cumin is good to eat, because it prepares good digestion for them and brings mild warmth to those who are too warm, but it harms every sick person, because it causes the illness within them to flare up. A person who wants to eat cheese should sprinkle cumin on it, so that they do not suffer pain from it, and thus eat.

Frequently Asked Questions – Mother Caraway Spice Blend: Distinction, Use & Dosage

Why mother caraway is not the same as caraway and how to use the blend.

Cumin Spice Blend

Is mother cumin the same as regular caraway?

No. Mother cumin is the old name for cumin (Cuminum cyminum) and belongs to a different genus than the native meadow caraway. In terms of flavor, they are worlds apart: mother cumin is warm and earthy, while meadow caraway is noticeably sharper and anise-like. Confusing the two is a mistake in any recipe.

What is the caraway spice blend traditionally used for?

In the Hildegard tradition, the blend is primarily known as an ingredient in a traditional egg dish described in old recipe collections. Beyond that, it can be used like any ordinary spice — in stews, rice dishes, or sprinkled over roasted vegetables.

How do I dose caraway correctly?

Around 2 g per preparation is a good guideline, so 40 g yields approximately twenty uses. The aroma is strong, so it's better to add more seasoning afterwards than to use too much at the beginning.

How do I keep the aroma of the caraway seed blend fresh?

Ground spices lose their potency faster than whole ones. Do not store the tin above the stove — heat and steam are the biggest aroma thieves. A dark cupboard and a tightly closed lid are sufficient.
