The Spelt Coffee Cure:
Day 1: Let 1 tablespoon of spelt coffee grains simmer in 1/4 L of water for about 5 minutes, then strain. Save the grains. This first spelt coffee decoction is more green than brown and will improve in taste over the next days. You can drink it with milk or cream and sweeten it with sugar.
Day 2: Add 1 tablespoon of fresh grains to the grains from day one, simmer again with about 1/4 L of water for around 3 minutes, strain, and save the grains.
Day 3: Add a tablespoon of fresh spelt grains to the grains from days one and two, increase the water a bit, simmer for about 3 minutes, and strain. Save the grains. Now the decoction tastes like good malt coffee.
Days 4, 5, and 6: Add another tablespoon of fresh grains each day to the saved grains and keep increasing the water a bit. Repeat the six-day cure as needed. You won't get used to it in a negative way.
You can also crumble spelt bread into the coffee (“Mocken”). The bread pieces should soak up the liquid well.
