Frequently Asked Questions – Spelt Flour Type 630: Baking Behavior, Type Number & Conversion

What the type number means and what you should pay attention to when baking with spelt flour.

Spelt Flour Type 630

What does the type number 630 mean for spelt flour?

It indicates the mineral content in milligrams per 100 g of flour. Type 630 is a light refined flour and is roughly equivalent to what type 550 is for wheat. It is suitable for everything you would otherwise use light flour for — bread, rolls, cakes, yeast pastries.

Can I simply replace wheat flour with spelt flour on a one-to-one basis?

In terms of quantity, yes, but not when it comes to handling the dough. Spelt gluten is more sensitive than wheat gluten, so you should knead for less time and at a slower speed. Also plan for slightly less liquid and keep an eye on the rising time, as spelt dough tends to over-proof more quickly.

How much spelt flour do I need for a bread?

For a medium-sized loaf, you need around 500 g of flour. So a 1 kg pack makes two loaves. For cakes or biscuits, the pack goes much further.

What is the best way to store spelt flour?

Cool, dry and sealed airtight. Since spelt flour contains no additives, it is more sensitive to moisture than conventional flours with baking agents. In a sealed container, it keeps for several months.
