Healthy Enjoyment with the Hildegard Kitchen - This is What Joie de Vivre Tastes Like!

Eating is so much more than mere food intake. With every bite, we can consciously choose to nourish our bodies with foods that bring us joy and address our inner balance. Hildegard von Bingen understood this connection and developed a way of eating that unites pleasure with mindfulness.

The supreme principle of the Hildegard kitchen is: as natural and unadulterated as possible. Vegetables and fruit from organic cultivation, herbs and spices from controlled wild harvesting, grains from whole grain sources – all these foods are at the heart of Hildegard's nutritional teachings. The less a food is processed, the closer it is to what Hildegard described as original and valuable.

A leading role on Hildegard's menu is played by grains, particularly spelt, oats and millet. They provide long-lasting satiety and valuable dietary fibre. Spelt, for example, is excellent for home-baked bread, hearty gratins or creamy soups. Combined with fresh seasonal vegetables and high-quality plant oils, a spelt dish is a true feast – entirely in the spirit of Hildegard's teachings.

Speaking of plant oils: here too Hildegard has very clear preferences. First and foremost is camelina oil, which is distinguished by a special fatty acid profile. Olive oil and walnut oil also find a place in Hildegard's pantry – as flavourful companions for salads, vegetable pans or quark dishes.

In general, the rule in the Hildegard kitchen is: meat and animal products should be used sparingly, but in first-class organic quality. Eggs from happy hens, a good piece of mountain cheese, an occasional fish from clear waters – this fits wonderfully with Hildegard's vision of mindful eating. The focus is clearly on a predominantly plant-based, natural diet.

Seasoning in the Hildegard kitchen is done with care and a delicate touch. Hildegard's favourites are pellitory, galangal and wild thyme – all herbs that play a special role in her writings and wonderfully refine food. Often just a pinch is enough to transform a simple dish into an aromatic delight for the palate. This makes every meal a mindful pleasure for all the senses.

A particular highlight of the Hildegard kitchen is the fasting recipes, above all the famous Hildegard fasting soup. Prepared from spelt semolina, vegetables and selected spices, it is a classic in Hildegard's tradition. Anyone who regularly observes a mindful fasting period according to Hildegard follows a centuries-old tradition and creates space for mindfulness and reflection.
